Billy's Sugar-Free Chocolate Cheesecake

A few years ago our theatre troupe did the musical "Wings". In the show the character Billy talks incessantly about his recipe for cheesecake and even sings about it in the clever song "A Recipe for Cheesecake", but he never manages to make it. It's a sad story, but it explains partly why we call this recipe for cheesecake Billy's. It's very rich and very tasty, and works quite well with the Equal sweetener.

Billy's Sugar-Free Chocolate Cheesecake

  • 1.1/4 cups graham cracker crumbs
  • 4 tablespoons melted butter
  • 1 teaspoon Equal Measure, or 3 packets Equal sweetener, or 2 tablespoons Equal Spoonful (Equal measure #1)
  • 2, 8-ounce packages cream cheese, softened
  • 5.1/2 teaspoons Equal Measure, or 18 packets Equal sweetener, or 3/4 cup Equal Spoonful (Equal measure #2)
  • 2 eggs
  • 2 egg whites
  • 2 tablespoons cornstarch
  • 1 cup sour cream
  • 1/3 cup European or Dutch process cocoa
  • 1 teaspoon vanilla
  1. Mix graham cracker crumbs, melted butter, and Equal measure #1 in bottom of 9-inch springform pan. Pat mixture evenly on bottom and 1/2 inch up sides.
  2. Beat cream cheese and Equal measure #2 in large bowl until fluffy.
  3. Beat in eggs, egg whites, and cornstarch. Mix in sour cream, cocoa, and vanilla until well blended. Pour mixture into crust.
  4. Place cheesecake in roasting pan on oven rack. Add 1 inch hot water to roasting pan.
  5. Bake cheesecake in preheated 300°F oven just until it is set in the center -- about 45 to 50 minutes.
  6. Remove cheesecake from roasting pan; return cheesecake to oven. Turn oven off and let cheesecake cool 3 hours in oven with door ajar.
  7. Refrigerate cheesecake 8 hours or overnight before removing from springform pan.
